High Protein Scrambled Eggs

  • 4 eggs
  • ¼ cup cottage cheese
  • ½ tbsp water
  • pinch salt and pepper to taste
  • 1 tbsp butter
  • 1 tbsp chopped chives


  • Place the eggs, cottage cheese, water and seasoning into a mixing bowl and blend with a stick blender until smooth. Alternatively, use a whisk to whisk the ingredients.
  • Heat the butter in a small frying pan over a medium heat.
  • Pour in the egg mixture. As the egg begins to set, using a silicone spatula, stir to incorporate air until just cooked through.
  • Serve with a sprinkle of chopped chives.


  • Blending the egg mixture with a blender helps to incorporate air, making the cooked eggs light and fluffy.
  • Serve with a side of crispy bacon, cooked mushrooms or your favourite breakfast sides.
