Strawberry Breakfast Bowl

This high-protein strawberry breakfast bowl features a creamy blend of cottage cheese and strawberries, topped with fresh, juicy berries. This satisfying and nutritious dish provides a delightful balance of flavours and textures, ensuring a perfect start to your day.

Ingredients
  

  • 1 cup cottage cheese
  • 4 strawberries fresh
  • 1 tbsp monk fruit sweetener optional
  • 1 tsp chia seeds
  • ½ cup mixed berries
  • 2 tbsp desiccated coconut toasted

Instructions
 

  • Place the cottage cheese, strawberries and sweetener (if using) into the bowl of a food processor and blend until smooth.
  • Divide into 4 serving dishes and top with chia seeds, berries and coconut.
  • Store covered, in the fridge for up to 3 days.

Notes

  • Other topping suggestions: pepitas, toasted slivered almonds, walnuts or low carb sugar free granola.
  • To add extra protein add a scoop of vanilla protein powder to the cottage cheese mixture.
  • It's best to use fresh strawberries for this recipe.
