High Protein Scrambled Eggs

Ingredients
- 4 eggs
- ¼ cup cottage cheese
- ½ tbsp water
- pinch salt and pepper to taste
- 1 tbsp butter
- 1 tbsp chopped chives
Instructions
- Place the eggs, cottage cheese, water and seasoning into a mixing bowl and blend with a stick blender until smooth. Alternatively, use a whisk to whisk the ingredients.
- Heat the butter in a small frying pan over a medium heat.
- Pour in the egg mixture. As the egg begins to set, using a silicone spatula, stir to incorporate air until just cooked through.
- Serve with a sprinkle of chopped chives.
Notes
- Blending the egg mixture with a blender helps to incorporate air, making the cooked eggs light and fluffy.
- Serve with a side of crispy bacon, cooked mushrooms or your favourite breakfast sides.
