Ingredients
- ¼ cup coconut oil
- ¼ cup almond butter
- 3 tbsp erythritol
- ¾ cup whole almonds
- ⅔ cup whole hazelnuts
- 1 cup pecans
- ⅔ cup walnuts
- ¾ cup pepitas
- ¾ cup sunflower seeds
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- Pinch of salt
Instructions
- Preheat oven to 150C. Line two oven trays with baking paper.
- Place all ingredients into a food processor and pulse until desired texture.
- Spread evenly onto prepared oven trays.
- Place trays in the oven to cook for 15-20 minutes, making sure to stir if the edges are browning.
- Remove trays from oven and allow to cool completely.
- Store in an airtight container in a cool dry place.
Notes
- Granola can be served with chilled almond milk, natural yogurt or double cream as a delicious breakfast or dessert.
