Strawberry Breakfast Bowl

Ingredients
- 1 cup cottage cheese
- 4 strawberries fresh
- 1 tbsp monk fruit sweetener optional
- 1 tsp chia seeds
- ½ cup mixed berries
- 2 tbsp desiccated coconut toasted
Instructions
- Place the cottage cheese, strawberries and sweetener (if using) into the bowl of a food processor and blend until smooth.
- Divide into 4 serving dishes and top with chia seeds, berries and coconut.
- Store covered, in the fridge for up to 3 days.
Notes
- Other topping suggestions: pepitas, toasted slivered almonds, walnuts or low carb sugar free granola.
- To add extra protein add a scoop of vanilla protein powder to the cottage cheese mixture.
- It's best to use fresh strawberries for this recipe.
