Ingredients
  

  • ¼ cup coconut oil
  • ¼ cup almond butter
  • 3 tbsp erythritol
  • ¾ cup whole almonds
  • cup whole hazelnuts
  • 1 cup pecans
  • cup walnuts
  • ¾ cup pepitas
  • ¾ cup sunflower seeds
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • Pinch of salt

Instructions
 

  • Preheat oven to 150C. Line two oven trays with baking paper.
  • Place all ingredients into a food processor and pulse until desired texture.
  • Spread evenly onto prepared oven trays.
  • Place trays in the oven to cook for 15-20 minutes, making sure to stir if the edges are browning.
  • Remove trays from oven and allow to cool completely.
  • Store in an airtight container in a cool dry place.

Notes

  • Granola can be served with chilled almond milk, natural yogurt or double cream as a delicious breakfast or dessert.
