Poached Eggs & Avocado On Garlic Cheese Toast

Poached Eggs & Avocado on Garlic Cheese Toast

Ingredients
  

Garlic and Cheese Toast

  • 3 tbsp almond flour
  • 1/2 tsp baking powder
  • 1 egg
  • 1 tbsp oil
  • 1 tbsp grated parmesan cheese
  • 1/4 tsp garlic powder
  • 1/2 tsp chopped chives optional
  • 1/4 tsp salt
  • 1/4 tsp pepper

Smashed Avocado

  • 1/2 ripe avocado
  • 2 tbsp feta or goats cheese
  • 1 tsp lemon juice
  • Pinch cracked black pepper

Poached Eggs

  • 2 eggs
  • 2 cups water
  • 1 tbsp white vinegar

Instructions
 

Garlic and Cheese Toast

  • Prepare the garlic and cheese toast by mixing all ingredients in a well greased raminken dish.
  • Place in a microwave for 90 seconds. If the center isn’t fully cooked return for an additional 10-20 seconds.
  • Remove, turn out onto a chopping board and slice in half making 2 thin rounds.

Smashed Avocado

  • Place all of the ingredients for the avocado smash into a bowl and roughly mix together, leaving it slightly lumpy.

Poached Eggs

  • Heat the water and vinegar in a small pot until just simmering.
  • Crack one egg into a cup.
  • Swirl the simmering water to form a whirlpool and gently pour the egg into the center of the moving water.
  • Keep an eye on the water you do not want it to boil, just a gentle simmer.
  • Poach the egg for 3-4 minutes, remove and drain on kitchen paper towel.
  • Repeat with the remaining egg.
  • While the eggs are cooking place the garlic and cheese toasts into a toaster or in a small frying pan with ½ tbsp butter. Toast until lightly golden in colour. Remove and set aside.
  • To serve top the toasts with the avocado smash, poached eggs, cracked black pepper and chopped chives.
