Mixed Berry Crumble

Ingredients
CRUMBLE TOPPING
- 1 cup almond flour
- 1 cup shredded coconut
- 1 tbsp monk fruit sweetener
- ½ tsp cinnamon ground
- 1 tsp vanilla essence
- ¼ cup melted butter
FILLING
- 500 g mixed berries
- 1 tbsp monk fruit sweetener optional
- 1 tbsp lemon juice
- 1 lemon zested
Instructions
- Preheat oven to 160°C.
- Add all crumble ingredients to a medium mixing bowl and mix until well combined. Set aside.
- Gently mix all filling ingredients in a mixing bowl until well combined.
- Spread filling in an even layer in a 20cm baking dish.
- Sprinkle crumble topping evenly over the filling.
- Bake for 20-25 minutes or until golden and filling is hot
- Remove from oven, and serve warm with a dollop of whipped cream, coconut yogurt or natural unsweetened Greek yogurt.
Notes
- Fresh or frozen berries can be used however if using frozen berries you'll need to defrost them before using.
- If the crumble topping begins to brown too quickly cover with a sheet of foil to prevent it from burning.
- Store leftovers in a sealed container in the fridge for up to 4 days.
- Berries crumble can be frozen for up to 1 month.
