Chocolate Self Saucing Pudding

Chocolate Cake:

  • 1 cup almond flour
  • ¼ cup cocoa powder
  • 1 tsp baking powder
  • ¼ cup brown monkfruit sweetener
  • ½ tsp instant coffee granules
  • 2 tsp vanilla extract
  • ¼ cup almond milk
  • 4 eggs
  • ¼ cup butter melted

Chocolate Sauce:

  • 2 tbsp brown monkfruit sweetener
  • ¼ tbsp cocoa powder
  • 1 cup boiling water


  • Preheat the oven to 180C.
  • Whisk all cake ingredients into a mixing bowl, whisking until smooth.
  • In a separate small bowl mix together the sauce ingredients.
  • Pour the sauce over the top of the cake batter.
  • Bake in the oven for 15-20 minutes.
  • Serve topped with a dollop of whipped cream, coconut yogurt or greek yogurt.
  • Store leftovers covered in the fridge for up to 4 days.
