Chocolate Self Saucing Pudding

Ingredients
Chocolate Cake:
- 1 cup almond flour
- ¼ cup cocoa powder
- 1 tsp baking powder
- ¼ cup brown monkfruit sweetener
- ½ tsp instant coffee granules
- 2 tsp vanilla extract
- ¼ cup almond milk
- 4 eggs
- ¼ cup butter melted
Chocolate Sauce:
- 2 tbsp brown monkfruit sweetener
- ¼ tbsp cocoa powder
- 1 cup boiling water
Instructions
- Preheat the oven to 180C.
- Whisk all cake ingredients into a mixing bowl, whisking until smooth.
- In a separate small bowl mix together the sauce ingredients.
- Pour the sauce over the top of the cake batter.
- Bake in the oven for 15-20 minutes.
- Serve topped with a dollop of whipped cream, coconut yogurt or greek yogurt.
- Store leftovers covered in the fridge for up to 4 days.
