Ingredients
Chia Pudding
- 1½ cups canned coconut cream or almond milk
- ½ cup water (exclude if using almond milk)
- 1½ tbsp erythritol optional
- 1 tsp cinnamon ground
- 2 tsp vanilla extract
- ¼ cup chia seeds
Blueberry Sauce
- 1 cup frozen blueberries
- ⅓ cup water
- 1 tbsp chia seeds
- ½ tbsp erythritol
- ½ lemon, juiced
Topping
- ½ cup fresh blueberries
Instructions
Chia Pudding
- Add all chia pudding ingredients to a mixing bowl, whisk together until well combined.
- Refrigerate overnight to set.
Blueberry Sauce
- Place all sauce ingredients into a small saucepan, bring to the boil.
- Using a wooden spoon, stir and mash the berries, until sauce starts to thicken. Adjust sweetness to taste.
- Set aside and allow to cool completely.
To Assemble
- Divide the sauce between 6 serving jars, reserving some for the top.
- Top with a layer of chia pudding, reserved blueberry sauce and fresh blueberries.
Notes
If using almond milk do not add water to the chia pudding mix.
