Blueberry Chia Pots

Chia Pudding

  • cups canned coconut cream or almond milk
  • ½ cup water (exclude if using almond milk)
  • tbsp erythritol optional
  • 1 tsp cinnamon ground
  • 2 tsp vanilla extract
  • ¼ cup chia seeds

Blueberry Sauce

  • 1 cup frozen blueberries
  • cup water
  • 1 tbsp chia seeds
  • ½ tbsp erythritol
  • ½ lemon, juiced


  • ½ cup fresh blueberries


Chia Pudding

  • Add all chia pudding ingredients to a mixing bowl, whisk together until well combined.
  • Refrigerate overnight to set.

Blueberry Sauce

  • Place all sauce ingredients into a small saucepan, bring to the boil.
  • Using a wooden spoon, stir and mash the berries, until sauce starts to thicken. Adjust sweetness to taste.
  • Set aside and allow to cool completely.

To Assemble

  • Divide the sauce between 6 serving jars, reserving some for the top.
  • Top with a layer of chia pudding, reserved blueberry sauce and fresh blueberries.


If using almond milk do not add water to the chia pudding mix.
