Low Carb Beef Pho

Ingredients
- 2 cups beef bone broth
- 1 star anise
- ½ cinnamon quill
- ¼ onion chopped
- 1 clove garlic
- 1 cm ginger
- 1 tbsp coconut aminos
- 1 tsp fish sauce
- 1 cup Slendier Edamame spaghetti
- 100 g eye fillet steak thinly sliced
- 3 button mushrooms sliced
- 1 Bok choy thinly sliced
- 1 cup bean sprouts
- Fresh coriander roughly chopped
- Fresh chili sliced
- Toasted sesame seeds
- Lime
Instructions
- Heat bone broth in a saucepan along with star anise, cinnamon, onion, garlic and ginger.
- Bring to the boil, reduce heat and simmer for 10 minutes.
- Strain to remove all herbs and spices. Return broth back to pot. Season with salt and pepper to taste.
- Add the fish sauce, coconut aminos, sliced mushrooms and noodles.
- Bring to the boil and cook until noodles are al dente. Remove from heat.
- In a serving bowl place the sliced bok choy, bean sprouts, chopped coriander to taste.
- Add the thinly sliced beef to the hot beef broth (beef will cook very quickly with the heat of the stock)
- Ladle soup over prepared ingredients in bowl.
- Top with sesame seeds, fresh coriander, sliced chili and lime.
